Dude, I need more than all my fingers and toes to count the number of times I've used that word in sentence. Well, not callipygian, but callipyge...same thing. It is in fact a term used often in the livetock/meat business, and I personally saw a few callipyge lambs come through kill floor during my tenure at the Meat Science Lab in college.
Callipyge lambs have a genetic mutation that causes them to muscle heavily. I could go on and on, but if you're interested, you can find more info here: http://calag.ucop.edu/0106ND/pdfs/calapyg.pdf
